Green Tomatoes Two Ways

Pickled: Bring a cup of vinegar, a cup of white sugar and a pinch of salt to boil in a saucepan. Stir about ten minutes. Add pickling spices to mixture and simmer. Put sliced tomatoes, crushed garlic and sliced shallots in a clean spaghetti jar. Pour vinegar mix over tomatoes and let cool completely. Cap and store in fridge. Those babies should be ready to eat in 24 hours.

Fried: Slice the tomatoes, dip in a beaten egg, then dredge in cornmeal seasoned with salt & pepper. Fry for a few minutes on each side.
